The What If Society Studio, Moss Vale

Eilish Maloney is the founder of the zero-waste food cooperative What If Society, and this inviting, natural-light-filled space is where she feeds honest ordinary people with thoughtful and delicious cooking. By day there is a main menu of pastries, pies, slices and sausages, as well as smart brunchy dishes such as pak choy battered with fermented chilli, curry and scrambled egg.

On Thursday to Saturday evenings the Studio transforms into a wine bar, and you can cook a full meal from things like oysters with finger lemon oil, fried cabbage and pepper labneh and beef carpaccio with smoked tomato. The coffee, cocktails and ever-changing wines are top-notch too.
