I agree – a sad loss of taste all around. I believe restaurant owners are exaggerating the sound opinion and leaving the rest of us with no option to eat the delicious way it was meant to be. I would add to your list the egg tossing in Tonkatsu soup, which once had the traditional Japanese tang, but is now raw boiled eggs with the right texture but none of the flavor usually imparted by the right marinade. I also eat at the Lotus of Siam. When I ate there for the first time, the waiter (owner?) asked about our tastes and brought out some amazing tasting sauces when we showed our taste buds. Later, these were not offered, and the food itself has become blander, while still very tasty. As a result, I’m eating less food, and I’m thinking about learning how to make my own Tonkatsu eggs. – Dan Hara
